A plain face gives you nowhere to hide: the cloth has to be pulled dead even across the whole board or every light in the room will find the slack.
The edges are stitched rather than stapled round, so the corners stay square after a few years of being leant on.
Mustard is the colour people ask for when the rest of the room is behaving itself.
